Muffin in a Minute

¼ cup Bob’s Red Mill Flax Meal (regular or golden)
½ teaspoon Ener-G GF Baking Powder
1 packet sweetener of choice (or a splash of Davinci’s Sugar-Free Syrup)
1 teaspoon cinnamon
1 large egg
Stir the dry ingredients together in a coffee mug, then add the egg (and liquid sweetener, if using.) Mix well and microwave on high for one minute (approx – may take a little longer.) The batter will puff up while cooking and look like it’s going to overflow, but it won’t. Remove the muffin from the cup and enjoy. It’s really good sliced in half, toasted, and topped with butter or cream cheese. Can also be made into a savory muffin by replacing the cinnamon with your favorite savory flavors.
The variations are only limited by your imagination. Try it with canned pumpkin, cocoa, berries, shredded cheese, etc.
Makes 1 large muffin with 2 net carbs as written (if a zero carb sweetener is used.)
