Almond Flour Pie Crust

INGREDIENTS:
1 ½ cups blanched almond meal/flour (Lucy’s or Bob’s Red Mill)
¼ tsp salt (optional)
3 tbls Sensato Erythritol, or sweetener of choice
3 tbls melted butter (for dairy free, use Nutiva coconut oil or Earth Balance Buttery Spread)
½ tsp vanilla

PREPARATION:
Preheat oven to 350 degrees
Mix dry ingredients in a bowl. Add melted butter (and liquid sweetener if using) and stir until thoroughly combined. Press into 9” pie pan and bake for 10-12 minutes, or until crust is beginning to brown. Cool before filling.
Variation: use other nuts (finely ground), or a combo of nut meals


Makes 8 servings, each with 1.5 net effective carbs
